Turkey Tetrazzini

Turkey Tetrazzini

6 ounces spaghetti, broken up
1/4 cup butter
1/2 cup all-purpose flour
2 3/4 cups chicken broth
1 cup light cream (half and half)
1/4 cup dry sherry
1 teaspoon salt
dash of pepper
1 (6 ounce) can sliced mushrooms, drained
2 cups diced cooked turkey (or chicken)
1/2 cup shredded mozzarella or Parmesan cheese

Cook pasta in boiling water just until tender, al dente, and
drain. In a large skillet, melt butter and blend in flour. Stir
broth into flour mixture. Add cream and cook, stirring, until
mixture thickens and bubbles. Add wine, salt, pepper,
mushrooms, drained spaghetti, and cooked turkey. Preheat
oven to 350 degrees F. Turn mixture into a cooking sprayed
12x7 1/2x2-inch baking dish. Sprinkle top with cheese.
Bake for 30 minutes. Makes 6 to 8 servings.
