Black Eye Peas
1 lb. black eye peas
smoked ham
3/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. sugar
Rinse peas and soak in cold water for 20 mins.
Combine peas and remaining ingredients into a
large pot. pour ic cold water to cover the peas
by 1 inch
Heat to simmering & cook covered until peas
are tender but not mushy (about 1 1/2 hours).
make sure you keep enough water in the pot.
